Today is very different than yesterday-it is cold, clammy and dreary-that is not to say it is a BAD day just different-I actually like this kind of day-makes me want to curl up with a good book, a cup of tea, the fireplace on and OH YES COOKIES-I loooove cookies but of course I would have to make some so here is what I will make today:
Cranberry Orange Almond Shortbread Cookies
makes 4 dozen(I will be doubling that)
Cook for 20minutes at 325 degrees
1 cup unsalted butter, softened
1 cup confectioner's sugar(powdered)
3/4 t almond extract
1/2 t salt
2 cups all purpose flour
1 T orange zest
2/3 cup sliced almonds, toasted
1/3 cup dried cranberries chopped
Place butter, powdered sugar, almond extract and salt in a bowl of a stand mixer and beat until smooth, about 3 minutes. Turn mixer to low and gradually add flour and orange zest. Mix until dough forms. Stir in the almonds and cranberries with a spatula. Pat dough into a ball and then form into a log shape about 2 inches in diameter. Wrap in plastic wrap and freeze until firm about 2 hours. Remove the dough from the freezer and slice into 1/4 inch rounds. Place on a cookie sheet-1 inch apart- lined with parchment paper. Bake 20 minutes just until the edges start to turn golden. Let cool for about 5 minutes before removing cookies from the cookie sheet or they will crumble. These are delicate until they are completely cool.
